Ok so a couple people have asked for this recipe and it's super simple.
Ingredients (this feeds my family of 3 with left overs)
2 Chicken Breasts Cubed
1 Jar Curry Sauce (I like Trader Joe's or Patak's)
Pineapple (1 can or fresh)
1 Onion Diced
2 Sweet Potatoes cut into large chunks (about 1" square)
Method 1 (super easy)
Put everything in the crock pot and cook on low for 6 hours
Method 2 (still easy)
Add Chicken, Sauce and Onion to crock pot and cook on low for 6 hours
After 3 hours add sweet potatoes
With 1 hour left add pineapples
Method one results has mushier sweet potatoes and pineapple but still delicious!
Serve with rice!

Menu Planning Monday

Tot School: Week 1 Day 1 - Superheros
Today we started Tot School. I'm starting small with 5 minutes a day dedicated to Tot School. This week we are focusing on Superheros. And what better way to start than with Star Wars. After breakfast we broke out a coloring book and some crayons and colored.
After a few minutes of coloring he enjoyed putting away the crayons and taking them back out. And putting them away. And taking them out. And putting them away. (you get the point.)
He like using the crayons to color but also like trying to eat them. He laughed every time he put the crayon to his mouth and I said "yucky". We focused on coloring with green and red.

Tot School
During my blog browsing I came across Toddler Awesome who was participating in Tot School. Since Jude is so active I never thought it would be possible to get Jude to participate in crafts and other learning activities so I never really tried. But with the help of Tot School I think I can find suitable crafts and activities for a kid like Jude.
Tot School is a focused time each day on the tot in your family. So with the assistance of a few great mommies and their blogs I've decided to give it a try. Toddler Awesome has organized theme weeks for her son and I thought this was a great idea so I did the same.

Thoughts on Losing
So you may have noticed my big campaign over the past few days for the photo contest. Well it appears that we probably won't take home 1st place but I'm learning to be OK with that. I don't like losing but I also will NOT cheat. I will ask everyone I know and even offer them incentives to vote for me but I WILL NOT falsify votes. (And believe me I have more than the capability to vote as many times as I like.) I also feel horrible that the other contests thought we were cheating since I offered incentives on my other blog. (That's how contests work in the blogging community and I didn't realize the other contestants would perceive it has bribary.)
Joe and I do not have any additional money to spend on the expenses that would be involved in taking home 2nd or 3rd place so I'm not sure what we'll do with those winnings. But I'd rather have a clear conscious than get a free photo shoot unethically. But I know that every time I would look at my beautifully framed portrait I'd think about how I cheated.
Anyway, this post is mostly to remind myself that it's ok to come in 2nd or 3rd place.

My son is such a ham.
Last night we had community group at our friend house and Jude stayed up extra late. Because he was up much later than normal he got a little goofy and demanded he be the center of attention. From butter tubs on his head to giveaway everyone a high five he was "on".

Date Night - A definition
What qualifies a date?
As Valentine's Day approaches I've been asking myself what it really means to date your spouse. Before you got married dates were pretty obvious. But after getting married and starting a family the line starts to get a little fuzzy.
We would all agree that leaving the kids at home and going to dinner is obviously a date. But what if you're like us and don't have the money to go out to dinner much less hire a babysitter. That's when you have to get creative.
Joe and I go on a lot of "dates" which consist of sitting on the couch watching a movie, playing a board game or just talking after Jude has gone to bed. Even when he works long days, has class, tutors, has band practice and other obligations he will stay up late just to spend time with me. It could be bed cuddles just before bed where we talk about or day, stress and dreams. I think the key is being intentional.
One day I'd like to have money to go out to dinner, just the two of us but that day appears to be a long way off. So for this Valentine's day we'll be eating a big lunch between all 4 church services while the baby sleeps.

Moving Forward
So you may remember that for Christmas Joe got me a membership to the YMCA. Well I thought I'd give a little update on my workouts and Jude's playing.
I particularly love the Y because of the childcare. The workers now know Jude and are always welcoming to him. He absolutely loves the train table, but then again what toddler boy doesn't. Often I will leave while he's playing at the train table and return an hour later and he's still in the same spot. I don't know if he plays with other kids but he is always excited to go play when I drop him off. Equally he is excited to leave when I pick him up.
I've started to get into a routine finally. For the first few weeks I was exploring and trying to find my groove. Well, I think I've got it. After checking in and getting all my gear settled in the locker room I head for either the ellipticals or treadmills where I spend at least 30 minutes sweating it up. After a bit of cardio I do some weight machines each time focusing on a different area.
Over the past month I've lost 6lbs! Which is nice but I know I could do better. While I have been working out regularly I have in no way altered my eating habits. This is the hardest thing for me to do. I know if I could discipline myself I could probably lose twice as much. (eating half a bag of Oreos in one day most certainly does not help.)
So I now have a goal. In June I will be attempting to RUN my first 5K. I think this affords me plenty of time to train especially since I've never claimed to be a runner. (except for that time in 3rd grade when I ran a 7min mile) I'm hoping to work in small increments and work my way up to 3.1 miles. So far I can only do .5 miles before I feel like I'm going to die. And in the meantime I hope to gain control of my stress eating and chanel it into stress running.

Sunday: Saturday Part 2
With all this crazy weather in NC all of everything was closed on Sunday, including church. To be honest I was a little bit glad to have a day off. I dearly love my church but with Joe working a 12 hour shift all day Saturday and the previously crazy week we had it was comforting to know we had no where to be.

We all slept in a bit, I let Joe sleep in even longer since he's been working so hard lately. Then we layered up and headed out for a snowy walk. There's a big hill in our neighborhood where all of the kids and parents congregate to sled. Jude enjoyed watching the crazy kids and dads but mostly wanted to chase around the dogs and stomp in the street slush.
Joe took Jude on the sled twice and I don't think he cared for it much. Mostly because it was noon and he was cold, tired and hungry. After lunch and a long long nap we headed down the road to Krispy Kreme. We had a pile of free donut coupons that were getting ready to expire so we bought 2 dozen donuts and invited the Serozi family to join us. Jude got a balloon and two donuts, which he called faffles. (faffles = waffles)
After gorging ourselves on faffles we went home, ate pizza, put the boy to bed and watched 9. Overall it was an excellent secret Saturday. Joe said it was the best 1 day weekend he's ever had.
Since Joe doesn't get off work for anything he's been working his regularly schedule shifts while schools are closed and businesses are delayed. They weatherman is forecasting snow again this weekend but I'm dreading it a little less this time since Joe doesn't have to work on Saturday.
